Tenka Ippin is a popular ramen chain that originated in Kyoto, Japan. In addition to a choice of two soups, "kottari," which is a potage-like broth that gets entangled in the noodles, and "light," which is a standard soy sauce-based soup, some stores also offer "yatai no aji," a mixture of "kottari" and "light," and "ajiasane," a miso ramen in which the soup thickness is adjustable.
