Yayoiken, a set meal restaurant, offers the "[5 pieces] Saikyo-yaki Set Meal of Sangen Pork Shoulder Loin (with Agedashi Tofu)" (1,190 yen) and the "[3 pieces] Saikyo-yaki Set Meal of Sangen Pork Shoulder Loin (with Agedashi Tofu)" (950 yen), which are aromatically grilled tender and chewy sangen pork shoulder loin marinated in Saikyo miso, a Kyoto-based miso paste with a refined sweet taste and a low salt content. The tender and chewy shoulder loin of sangen pork marinated in "Saikyo Miso," which is characterized by its elegant sweetness, low salt content, and beautiful pale yellow color, and made with an abundance of rice malt, is grilled to perfection. The miso used in the marinade is "Saikyo Miso," which has been produced in Kyoto for about 200 years. In addition, the use of "raw soy sauce malt," which is made from specially selected soy sauce made from round soybeans, enhances the flavor of the meat.

Yayoiken's miso soup has a different flavor depending on the season!


The flavor of the miso soup served at Yayoiken restaurants will change with the seasons.
In spring and summer (March through August), Shinshu light-colored miso with a refreshing taste is used, and miso soup with bonito and kelp dashi broth is served. The miso soup is blended with katsuo (bonito) and kombu (kelp) dashi, which go well with Shinshu light-colored miso, to give the miso soup and dashi a special aroma.
